A 27-year-old man who was also arrested in connection with the incident continues to be questioned.
Turkish-born Mr Mansiz was found dead after a robbery at M&M Catering Supplies in St Andrew's Road, Avonmouth.
Initial findings of a post mortem examination showed Mr Mansiz, who lived in Lawrence Weston with his wife, had died of aortic stenosis – his heart literally stopped.
Because his death happened immediately after the robbery, detectives launched a murder inquiry.
Police have repeated an appeal for witnesses to the incident, which happened about 7.30pm and want to hear from anyone who was in the area at the time.
Mr Mansiz, who worked as a night manager, was found lying on the ground following a raid at the warehouse.
Paramedics and police were called to the firm's cold storage premises at 7.45pm and he was pronounced dead at the scene.
M&M Catering supplies doner kebabs, burgers and pizza bases to the food industry along with sauces, food boxes and cutlery.
Mehmet Yilmaz, the chairman of the Turkish Community Centre in Gloucester Road, said: "Senel was a well-respected member of the Turkish community. He was a very sincere person, he didn't have any problem with anybody. Our thoughts are with his family."
Fellow community centre member Mustafa Cicek said everyone was saddened by the news. He said: "We don't know what's happened, all we know is that he's died."
Police have repeated their appeals for witnesses. They would like to hear from anyone who was in the St Andrew's Road area in Avonmouth at the time of the incident – about 7.30pm on Thursday evening.
They especially want to speak to anyone who saw a black Audi saloon which may have been driven around the St Andrew's Road area on Thursday evening or for several days before the raid.
Anyone able to help the inquiry is asked to contact Bristol CID on 0845 4567000. Alternatively you can contact Crimestoppers on 0800 555111.
