The victim sustained fractures to the face and a bleed to the brain and was taken to hospital.
Police, who revealed details of the attack for the first time this afternoon, say they do not know whether any words were exchanged beforehand or what the motive of the crime was.
Detective Constable Cerys Millichip said: "This was an unprovoked assault that has left a man with serious injuries. This is a busy shopping area and I am confident that many people witnessed this assault taking place.
"I would urge anyone who witnessed this incident to come forward and contact Bristol CID with information."
Officers want to speak to a man who was wearing a dark jacket with a light hooded top underneath. He had the hood up and was also carrying a rucksack.
Witnesses should call police on 101, quoting crime reference 12378/13, or call Crimestoppers, anonymously, on 0800 555111.
